Preheat the oven to 180°C fan bake. Line a medium slice tin (18x18cm) with baking paper.
Core and finely chop apple. Heat coconut oil and maple syrup in medium pan on medium heat for 4 minutes to caramelise. Add apples to pan and cook for 5 minutes or until golden and softened. Remove from heat and set aside to cool.
In a large mixing bowl, combine oats, ground almonds, desiccated coconut, pecans, pumpkin seeds, chia seeds, cinnamon and ground ginger.
Add maple syrup, coconut oil, eggs to dry mix and stir until just combined. Stir through caramelised apples.
Spoon slice mixture into prepared tin and gently spread into an even layer. Bake for 20-25 minutes or until golden. Leave to cool completely before slicing into 12 slices. Store in an airtight container.
