Apple Pecan Caramel Oat Slice

Caramelised apples

  • 1 large apple cored and finely chopped (or 2 medium)
  • 2 tsp coconut oil
  • 2 Tbsp maple syrup


  • 1 ¾ cup rolled oats
  • ¼ cup ground almonds
  • ½ cup desiccated coconut
  • ½ cup pecans roughly chopped
  • ¼ cup pumpkin seeds
  • 1 Tbsp chia seeds
  • 2 tsp ground cinnamon
  • 1 ½ tsp ground ginger
  • cup maple syrup
  • ¼ cup coconut oil melted
  • 2 eggs (medium)


  • Preheat the oven to 180°C fan bake. Line a medium slice tin (18x18cm) with baking paper. 
  • Core and finely chop apple. Heat coconut oil and maple syrup in medium pan on medium heat for 4 minutes to caramelise. Add apples to pan and cook for 5 minutes or until golden and softened. Remove from heat and set aside to cool.  
  • In a large mixing bowl, combine oats, ground almonds, desiccated coconut, pecans, pumpkin seeds, chia seeds, cinnamon and ground ginger.  
  • Add maple syrup, coconut oil, eggs to dry mix and stir until just combined. Stir through caramelised apples.   
  • Spoon slice mixture into prepared tin and gently spread into an even layer. Bake for 20-25 minutes or until golden. Leave to cool completely before slicing into 12 slices. Store in an airtight container.
