Raspberry, Strawberry & Yoghurt Fool

  • 250 g strawberries
  • 2 tsp honey
  • 200 g natural Greek yoghurt
  • 2 tsp honey
  • ½ tsp vanilla extract
  • 100 g raspberries
  • 4 Tbsp sliced almonds


  • Halve or quarter strawberries and toss in a medium bowl with first measure of honey. Set aside for 15 minutes
  • In a large bowl combine yoghurt, second measure of honey and vanilla. Mix, until smooth.  
  • Add two thirds of the raspberries and strawberries to yoghurt and fold gently until mixture is streaky and just combined. Scoop into small glasses and top with remaining berries and almonds.
