Peach & Lime Mojito

Ingredients

Peach pulp

  • 1 kg fresh peaches (or your favourite stone fruit)
  • 3 limes zested & juiced
  • 1 cup caster sugar
  • ½ cup water

To serve

  • ice cubes
  • 4-5 tbsp mint leaves
  • 1 lime
  • 1.5 litres soda water
  • 250 ml white rum, gin or vodka (optional)

Instructions

  • Remove stone from peaches and roughly chop. Add to a large pot along with zest and juice of limes, caster sugar and water. Place pot on a medium heat, bring to a simmer then allow to reduce into a pulp for 10-15 minutes (depending on the softness of your fruit). Use a potato masher to break peaches up while cooking.
  • Once sugar has dissolved and peaches have softened, remove from heat and allow to cool for at least 10 minutes. Place half the mixture into a heat-safe food processor or blender and blend until smooth. Repeat with remaining half.
  • Allow pulp to come to room temperature before serving or placing into the fridge to cool.
  • To serve, place 3 tablespoons of peach pulp into each glass with 30ml of liquor (if using), stir, then fill with ice cubes. Place a slice of lime and some mint into each glass and top up glass with soda water. Alternatively place 2 cups of syrup with all 'to serve' ingredients into a carafe for easy sharing!
