Summer Bircher Muesli with Pineapple and Coconut

Ingredients

Bircher

  • ½ cup bircher muesli (see link in notes)
  • ½ cup plant-based milk
  • ½ apple, grated

To serve

  • ¼ cup pineapple, diced 1cm
  • 1 bunch mint, leaves picked
  • 1 Tbsp coconut yoghurt
  • 1 tsp freeze dried pineapple (optional)
  • 1 Tbsp coconut thread

Instructions

  • Combine bircher mix with milk and grated apple in a bowl, jar or airtight container. Allow to soak overnight, in fridge.
  • Dice pineapple and pick mint.
  • Serve bircher topped with pineapple and coconut yoghurt. Sprinkle over freeze-dried pineapple, coconut thread and mint.
