Fruit Parfait with Quick Granola Crumb

Fruit Parfait

  • 1 cup fresh strawberries, halved or quartered
  • 2 nectarines, flesh diced 1cm 
  • ½ cup fresh blueberries 
  • Juice of ½ lime
  • 2 Tbsp mint leaves, thinly sliced 
  • 1 cup thick, unsweetened Greek yoghurt 
  • 1 tsp honey (optional)

Quick Granola

  • 2 tsp olive oil
  • Tbsp honey
  • ½ cup jumbo rolled oats
  • 1 tsp cinnamon 
  • 1 Tbsp pumpkin seeds
  • 1 Tbsp sliced or slivered almonds


  • Before you start line an oven tray with baking paper.
  • Prep strawberries and nectarine. Toss in a bowl with blueberries, lime juice and mint. Set aside.
  • Heat oil measure and honey in a pan on medium heat. Stir to combine and heat for about 30-60 seconds, until bubbling. Add oats, cinnamon, seeds and almonds and stir to coat in liquid. Continue to cook for 3-4 minutes, until lightly golden and fragrant. Reduce heat if oats begin to colour too quickly. Turn out granola on the prepared tray and leave to cool.
  • Serve yoghurt, fruit and granola layered in glass tumblers. Drizzle with honey.
