Before you start line an oven tray with baking paper.
Prep strawberries and nectarine. Toss in a bowl with blueberries, lime juice and mint. Set aside.
Heat oil measure and honey in a pan on medium heat. Stir to combine and heat for about 30-60 seconds, until bubbling. Add oats, cinnamon, seeds and almonds and stir to coat in liquid. Continue to cook for 3-4 minutes, until lightly golden and fragrant. Reduce heat if oats begin to colour too quickly. Turn out granola on the prepared tray and leave to cool.
Serve yoghurt, fruit and granola layered in glass tumblers. Drizzle with honey.
