Fennel Slaw

Ingredients

fennel bulb, thinly sliced
½
courgette, very thinly sliced
½
apple, grated
Juice of 1/2 lemon
½
tsp
white wine vinegar
½
tsp
mustard
Instructions
Prep all slaw ingredients. Combine in a large bowl with a pinch of salt and 1 tsp extra-virgin olive oil. Mix together well.
Serve as is, or topped with shredded, poached chicken.
