Fudgey Black Bean Brownies
400g can of black beans, rinsed and drained
unsweetened cocoa or cacao powder
maple syrup or coconut sugar
Preheat oven to 180°C. Line a small loaf tin with baking paper.
Add all ingredients to a food processor and combine for about 2 minutes, until thick and smooth. Alternatively, mash the beans in a large bowl and whisk in all remaining ingredients until very smooth.
Transfer mixture to prepared tin and bake for about 25-30 minutes, or until brownie springs back when pressed.
Allow to cool for about 1 hour before turning out onto cooling rack to cool completely.
Cut cooled brownie into 10 delicious squares. Coat with a little sifted cocoa, if desired.
