Before you start Preheat oven to high grill. Soak skewers in water for about 5 minutes.
Prep skewers Prep haloumi, mushrooms and courgette. Thread a mixture of haloumi and veggies onto skewers.
Cook skewers Place skewers on an oven tray, drizzle over oil and turn to coat. Season with salt and pepper. Place under grill for 5-6minutes, turning every minute, until golden and cooked.
