Sticky Pork Ribs

1.5 kg pork spare ribs

½ cup BBQ sauce

½ cup water or apple juice

¼ cup soy sauce

¾ teaspoon smoked paprika

¼ cup tomato sauce

2 cloves garlic, thinly sliced

To Serve

BBQ sauce

PREHEAT oven to 180°C.

  1. Cut pork ribs up by slicing through every second rib. In a deep oven tray or casserole dish, combine ribs with all remaining sticky pork ribs ingredients. Mix well to coat the ribs. Cover with baking paper, then wrap tightly with foil or cover with a lid and place in the oven to cook for 1 hour 15 minutes.
  2. Remove foil/lid and baking paper, and increase oven temperature to 200°C. Cook ribs, uncovered, for a further 15-20 minutes, or until tender.
  3. Set ribs aside until ready to BBQ. Preheat BBQ grill to medium. Grill ribs on BBQ for 5 minutes each side, then baste with a dollop of BBQ sauce and continue cooking, turning every 2 minutes, until hot through, glazed and tender. Baste each side twice.

TO SERVE, pile ribs on a plate, with your chosen sides. Enjoy!
