A sweet twist on a classic, this tangy and delicious cocktail is the epitome of summer. Refreshing and flavourful it will be your summer go-to!

Peach and Lime Mojito        


Peach Simple Syrup

2kg fresh peaches

3 limes

2 cups castor sugar

½ cup water


To Serve

Ice cubes

4-5 tablespoons mint

1 lime, thinly sliced

1L bottle soda water

250ml gin or vodka (optional)


1. Remove skin and stone from peaches and roughly chop flesh. Add to a large pot along with zest and juice of 3 limes, castor sugar and water. Place pot on a medium heat, bring to a simmer and allow to reduce into a pulp, about 10 minutes. Use a potato masher to break peaches up while cooking.

2. Once sugar has dissolved and peaches have softened, remove from heat. Place half the mixture into a heat-safe blender and blend until smooth. Repeat with remaining half.

3. Allow syrup to come to room temperature before serving or placing into the fridge.

To serve, place 3 tablespoons of peach simple syrup into a glass along with 30ml of liquor (if using,) stir, then fill with ice cubes. Tear mint, rub between your hands and place into glass. Place 1 lime slice into the glass and 1 onto the rim for decoration. Top up glass with soda water and use a cocktail stick to give everything a good stir. Alternatively place 1 cup of syrup with all ingredients into a carafe for easy sharing!
