Apple & Carrot Muffins

2 cups wholemeal flour

1 cup coconut sugar

2 teaspoons baking soda

½ cup desiccated coconut

2 teaspoons ground cinnamon

Pinch of salt

2 eggs

1 cup olive oil

½ cup milk

1 apple, grated (leave skin on)

2 cups grated carrot


Preheat oven 190oC. Grease 12 muffin tins.

1. Place all dry ingredients in a large bowl. In another bowl, whisk eggs, oil and milk together. Stir in grated apple and carrot. Add wet mixture to dry mixture and fold the two mixtures together using a large metal. Be careful not to over-mix to avoid the muffins becoming tough.

2. Spoon mixture into 12 muffin tins, dividing equally. Bake in middle of oven for about 25 minutes until light golden on top and muffins spring back when lightly pressed. Leave in tins for 5 minutes then remove and cool completely on a baking rack.

3. Optional: decorate with your favourite combination of icing, sprinkles, lollies.... or anything!
