Chewy Coconut Oat Chocolate Chip Cookies

Due to popular demand we thought we'd share a very special recipe with you all. It's for the Chewy Coconut Oat Chocolate Chip Cookies that we delivered to our foodies this weekend to help them treat Dad. Happy cooking!

Makes: 12 cookies                 

Prep: 5 minutes

Cook: 10-15 minutes

Ready in: 15-20 minutes



20g butter

1 egg

¼ cup soft brown sugar

¼ cup white sugar

¼ teaspoon vanilla powder

¼ teaspoon cinnamon

½ cup shredded coconut

½ cup whole oats

½ cup all purpose flour

½ teaspoon baking soda

½ cup chocolate chips


Preheat oven to 180⁰C.  Line an oven tray with baking paper.

1. Melt butter in a small pot on low to medium heat. Alternatively, place butter in a medium, heat-proof, bowl and microwave on high, covered, for 30-60 seconds until almost melted. Stir until remaining butter melts. Remove pot from heat and allow butter to cool slightly.

2. Whisk egg through cooled, melted butter, then add all remaining ingredients and stir until well combined.

3. Use a tablespoon to measure out cookie dough. Use a teaspoon or clean finger to slide dough off tablespoon onto prepared tray.  Use a wet fork to flatten until cookies are about 0.5cm thick.

4. Bake cookies (in middle rack of oven) for 10–12 minutes, or until golden (the cookies will harden as they cool). Allow cookies to cool on tray for about 5 minutes before transferring to a rack to cool completely.
