Banana bread is a tasty treat that’s so easy to make! It’s perfect to pop in the kid’s lunchbox or to enjoy with a cup of tea! It’s also a great way to use up the over-ripe bananas in your fruit bowl.

125g butter

1 cup brown sugar

2 eggs

2 ripe bananas, mashed

1 ½ cups plain flour, sifted

1 teaspoon baking powder

1 teaspoon bicarbonate soda

¼ cup natural yoghurt

¼ cup milk


PREHEAT oven to 180oC. Grease and line a loaf tin with baking paper.

  1. In a large bowl, use an electric mixer to beat butter and sugar until pale and creamy. Add the eggs, beating well to combine.
  2. Add the plain flour, baking powder and bicarbonate soda to the butter mixture. Stir until well combined.
  3. In a small bowl, whisk yoghurt and milk together. Add the yoghurt, milk mixture and the bananas to the flour mixture, beating well after each addition.
  4. Spoon the mixture into the prepared loaf tin. Bake for 45-50 minutes or until a skewer inserted into the centre comes out clean. Allow to cook for 5-10 minutes before turning out onto a wire rack to cool completely.

TO SERVE, cut into slices and divide between plates.

TIP, you could also toss in a cup of chopped nuts, raisins, or chocolate chips!
