Healthier Summer Desserts

It’s a scorcher this summer! If you’re looking for a tasty way to cool off after the indulgence of the festive season, we’ve got you! We’re all about healthier desserts – no need to avoid desserts altogether, just make a few swaps here and there. Check out our video workshop with Fresh Start chef Amber and nutritionist Emma to get their ideas for summer desserts, including a way to make pavlova lighter and fresher.

Fruity Eton Mess

In the video above we used small meringues as the crunch factor, or you can also use freeze-dried fruit. You can find freeze-dried fruit (we use a brand called Fresh As) at gourmet food stores. Instead of berries, you could also chop up canned apricots or black doris plums.

Frozen Berry Ripple Cake

This frozen ice cream/yoghurt cake is incredibly refreshing and summery, and so quick and easy to make (plus you can make it well in advance). It’s a great one to make for a special occasion without wanting to blow out on dessert calories! You could use a mixture of boysenberries and blackberries instead of raspberries and strawberries to get a different berry flavour and colour.
