Summer Bircher Muesli with Pineapple and Coconut
- ½ cup bircher muesli (see link in notes)
- ½ cup plant-based milk
- ½ apple, grated
- ¼ cup pineapple, diced 1cm
- 1 bunch mint, leaves picked
- 1 Tbsp coconut yoghurt
- 1 tsp freeze dried pineapple (optional)
- 1 Tbsp coconut thread
- Combine bircher mix with milk and grated apple in a bowl, jar or airtight container. Allow to soak overnight, in fridge.
- Dice pineapple and pick mint.
- Serve bircher topped with pineapple and coconut yoghurt. Sprinkle over freeze-dried pineapple, coconut thread and mint.
