Chickpeas are a great source of plant-based protein so try these out for a quick and tasty protein packed lunch option!
Smashed Chickpea Wrap
- ¼ can chickpeas drained & rinsed
- 1 Tbsp parsley chopped
- 2 Tbsp feta cheese crumbled
- 2 Tbsp yoghurt
- ¼ baby cos lettuce chopped
- ¼ carrot grated
- 20 g sprouts
- 1 wheatmeal tortilla
- Prep chickpeas. Prep chickpeas, parsley and feta and combine in a small bowl with yoghurt and a pinch of salt. Season with pepper and mash to combine.
- Prep fillings. Prep lettuce and carrot.
- Make wrap. Fill wrap with chickpeas, lettuce, carrot and sprouts. Roll up and enjoy!
