What was your inspiration for the Char Siu Eggplant Ramen featured in My Plant Based Bag?
I love ramen! It’s my go to on a cold day. Traditionally it is a meat-based dish but I wanted to come up with a vegan alternative that is just as tasty.

What’s your food philosophy and cooking style?
I really enjoy utilising whole plants. It is becoming easier to source vegetables in this way, which has developed my cooking style into something that is tasty and familiar but always has an element of surprise in the dish.

What can people expect when dining at LILLIUS?
Our kitchen is open and the dining room is designed in a way that diners are able to watch us as we work. We offer an à la carte menu and a six-course menu which both change often, usually every three weeks or less so there is always something new to try.
