Freekeh Salad with Grapes, Feta & Cauliflower

Serve this salad with lean protein for a healthy, high protein lunch!


Serves 2

1/4 cauliflower, cut into small florets

3/4 red onion, cut into 1cm wedges

1/4 cup freekeh

75g grapes, halved

50g baby spinach

1 Tbsp sliced almonds

1 Tbsp lemon juice

1 Tbsp feta cheese, crumbled

  1. Preheat oven to 220°C. Bring a small pot of salted water to the boil.
  2. Prep & cook cauliflower and onion. Toss cauliflower and onion on a lined oven tray with 1/4 tsp oil and a pinch of salt. Season and roast for 20–24 minutes, until tender.
  3. Cook freekeh. Cook freekeh in pot of boiling water for about 15 minutes, until tender with a slight bite. Drain well.
  4. Prep grapes and lemon. In a bowl, combine roasted cauliflower and onion, freekeh, grapes, spinach, almonds, lemon juice and 1 tsp extra-virgin olive oil. Season to taste and top with feta.

If preparing this to take for lunch, add everything except spinach to the container. Lay the spinach over top of the other ingredients so it’s ready to mix through when its time to eat.
