Smashed Pea, Lemon & Mint Dip

 

Serves 4

1 cup frozen peas

2 Tbsp chopped mint leaves

Juice of 1/2 lemon

2 Tbsp lite sour cream

  1. Bring a small pot of salted water to the boil.
  2. Cook peas. Add peas to pot of boiling water and cook for 1–2 minutes, until bright green and tender. Drain, rinse under cold water and drain again well.
  3. Make dip. Combine all dip ingredients and 1/2 tsp salt in a food processor and blitz for about 1 minute, until roughly combined. Alternatively, mash ingredients together in a bowl.
  4. Serve with veggie sticks.
