Fennel Slaw

Ingredients

  • ¾ fennel bulb, thinly sliced
  • ½ courgette, very thinly sliced
  • ½ apple, grated
  • Juice of 1/2 lemon
  • ½ tsp white wine vinegar
  • ½ tsp mustard

Instructions

  • Prep all slaw ingredients. Combine in a large bowl with a pinch of salt and 1 tsp extra-virgin olive oil. Mix together well.
  • Serve as is, or topped with shredded, poached chicken.
