Fennel Slaw


Serves 1

3/4 fennel bulb, thinly sliced

1/2 courgette, very thinly sliced

1/2 apple, grated

Juice of 1/2 lemon

1/2 tsp white wine vinegar

1/2 tsp mustard

  1. Prep all slaw ingredients. Combine in a large bowl with a pinch of salt and 1 tsp extra-virgin olive oil. Mix together well.
  2. Serve as is, or topped with shredded, poached chicken.
