Pantry Panic: Prawn Noodle Broth

Pantry looking a bit dire and in need of some inspiration? This easy Prawn Noodle Broth is a deliciously full-flavoured solution to your pantry panic! Swap the prawn for tofu (or any other protein) if you’re not a huge prawn fan! Then again, if that “don’t feel like cooking” vibe is a regular occurrence, keep some MADE meals in the freezer!

Bring 2 cups chicken broth / stock + 2 cups water to the boil. Once boiling, reduce to a simmer and add 2 sliced spring onions, 1 sliced garlic clove, pinch of chilli flakes, 100g soba or udon noodles and 1 diced broccoli. Cook for 3-4 minutes, then add 300g prawns (or tofu) and 1 tsp soy sauce and cook a further 3-4 minutes, until cooked through and noodles are tender. Season to taste with lemon juice and garnish with coriander.
