1 1/4 cups brown lentils, drained and rinsed
1/4 cup coriander and parsley leaves, chopped
1 clove garlic, chopped
Juice of 1/4 lemon
2 Tbsp wholemeal flour
- Prep & make falafel mixture. Add all falafel ingredients to a food processor, along with 1/2 tsp salt. Season with pepper. Blend for about 1 minute, until combined.
- Make patties. Using a tablespoon measure and damp hands, shape mixture into patties.
- Cook falafel. Heat 1 tsp oil in a non-stick fry-pan on medium heat. Cook falafel for about 2 minutes each side, until golden and cooked through.
- Serve 2–3 falafel on top of lunch salads or wraps, or as a tasty snack with hummus.
