#loveyourleftovers. Put your leftover frozen corn to good use and whip up this easily and tasty veggie snack!
2 cups frozen corn
1 tsp smoked paprika
2 Tbsp chickpea flour (or cornflour)
1 tsp oil
Preheat oven to 210°C.
2. Prep & cook corn. Rinse corn well under running water then drain. Pat corn dry using paper towels, then place in a bowl with smoked paprika, flour and 1/2 tsp salt. Toss corn well to coat. Season with black pepper.
3. Place corn on a lined oven tray with a lip, drizzle with oil and toss to coat. Spread out evenly and bake for about 15 minutes, until golden and crispy. Allow to cool completely. Store in an airtight container lined with a paper towel for up to 5 days.
Tip, use a light spray of spray oil for best results.
