Parmesan Roasted Veggies

#loveyourleftovers. Give leftover veges a second life with the help of delicious Parmesan cheese! Great as a snack or with protein and leafy greens for a healthy lunch, this tasty recipe will become a staple for sure!


Serves 1

Ingredients

1/2 broccoli, cut into florets

1/2 carrot, cut into chips

1/2 parsnip, cut into chips

1/4 cup Parmesan cheese, finely grated

Pinch of dried thyme (optional)

1/4 tsp garlic powder

1/4 tsp black pepper

Method

1. Preheat oven to 210°C.

2. Prep veggies. Toss on a lined oven tray with 1 tsp oil, Parmesan, oregano, garlic powder, pepper and 1/2 tsp salt. Spread out evenly.

3. Cook veggies. Bake for about 20 minutes, until veggies are tender. Season.

4. Serve as a snack, or toss with some leafy greens and top with a lean protein as for a healthy lunch.

Tip, add any more roasting veggies that need using up to the tray!
