Mini Eggplant Parmigiana Pizzas

#loveyourleftovers! Keen on pizza but watching your weight? Say hello to eggplant pizzas! With all the delicious, cheesy flavours of eggplant parmigiana but low in calories and carbs, this is a recipe you’ll keep coming back to!

Serves 2


1 eggplant, sliced into 1cm thick rounds

2 Tbsp tomato paste or purée

1 tomato, thinly sliced

1 handful baby spinach

1/2 cup grated Parmesan cheese Basil


Preheat oven to 210°C.

2. Prep eggplant. Spread eggplant rounds out on a lined oven tray, so there’s no overlap. Brush with 1 1/2 tsp olive oil and season.

3. Cook eggplant. Place eggplant in oven and cook for 14 minutes to start with.

4. Prep all remaining ingredients. Once eggplant has cooked initially, evenly spread top side with tomato paste/ purée, then top with tomato and spinach and sprinkle over cheese.

5. Cook pizzas. Season and cook pizzas for 16–18 minutes, until cheese has melted and eggplant is soft.
