Sri Lankan Coconut Slaw

#loveyourleftovers. You’ll love the Coconut Lime dressing that goes with this fresh, tasty slaw. Combined with a serve of protein it’s a perfect lunch or dinner.

Serves 2


Coconut lime dressing

100mL lite coconut milk

Juice of 1 lime

2 tsp rice wine vinegar

1 tsp ground turmeric

½ tsp honey

½ tsp fish sauce

Pinch of chilli flakes


1 cup frozen peas

½ pack slaw

½ broccoli, finely chopped

1 Tbsp coconut thread

To serve

2 portions pan-fried white fish, tofu or chicken breast

Coriander leaves


1. Prep dressing. Combine all dressing ingredients and ½ tsp salt in a blender and blend for about 30 seconds, until combined.

2. Prep & cook slaw. Cook peas in pot of boiling water for about 1 minute, until bright green and tender. Drain, rinse under cold water and drain again well. Combine in a bowl with slaw, broccoli and coconut. Toss through half the dressing.

3. Prep protein, if desired.

4. Serve slaw topped with your choice of lean protein. Garnish with coriander.
