Creamy Broccoli Soup

#loveyourleftovers. A comforting soup without the calorie hit!


Ingredients

½ tsp oil
½ broccoli, cut into small florets and stalk diced 1cm
½ clove garlic, finely chopped
1 cup stock
2 Tbsp lite sour cream
1 Tbsp grated Parmesan cheese
1 Tbsp parsley, chopped
¼ lemon, juiced

Method

  1. Heat oil in a heavy-based pot on low heat. Cook broccoli and garlic for 5–6 minutes, until bright green and softened. Add stock, increase heat to medium and simmer for 5–6 minutes, until soft.
  2. Transfer mixture to a heat-safe blender or use a stick mixer to purée until smooth. Return soup to pot and return to a medium heat. Fold through sour cream, Parmesan and parsley and bring to just below a simmer.
  3. Once warmed, ladle into a bowl, fold stir through lemon juice and season to taste.
