Broccoli Bites

Ingredients

1½ cups roughly chopped broccoli
2 eggs
¼ onion, finely diced
3 tablespoons wholemeal breadcrumbs
¼ cup ground almonds
1–2 tablespoons chopped coriander
2 teaspoons soy sauce
½ teaspoon sesame oil
1 teaspoon ginger garlic paste
½ teaspoon pepper

Dipping sauce (optional)

1 tablespoon soy sauce
½ teaspoon fish sauce
½ teaspoon sesame oil
Pinch of chilli flakes
1/8 teaspoon honey (optional)

Methods

Preheat oven to 210°C. Line an oven tray with baking paper. Bring a small pot of salted water to the boil.

1. Cook broccoli in pot of boiling water for 1 minute then drain, rinse under cold water until cool and drain again well.

2. Chop broccoli very finely and add to a medium bowl, along with all remaining broccoli bites ingredients. Mix thoroughly to combine.

3. Using a tablespoon measure and clean, damp hands, roll mixture into kofta shaped logs and place on prepared tray. Bake for 16–18 minutes, until golden brown and crispy. Allow to cool slightly before eating.

4. Whiles bites mix together all dipping sauce ingredients in a very small bowl (if using).
