#loveyourleftovers Holy Guacamole! Serve with raw veggie sticks, such as capsicum, carrot, celery, cucumber or radish.


¼ red chilli or a pinch of chilli flakes (optional)
2 tablespoons coriander leaves and stalks
1 tablespoons finely diced red onion
½ avocado
Juice of 1 lime or ½ lemon
1–2 teaspoons pumpkin seeds

Tip: Cut avocado in half lengthways and twist halves to separate. Remove stone using a spoon and scoop out flesh.


1. Finely dice chilli. Pick a few whole coriander leaves for garnish and set aside. Finely chop remaining coriander leaves and stalks.

2. Add all ingredients (except seeds and reserved coriander) to a medium bowl and mash until smooth. Season to taste with salt and pepper.

3. Transfer to a serving bowl and top with spiced seeds and reserved coriander leaves.
