Cauliflower-Based Pizza

Ingredients

340g grated cauliflower
1 egg, whisked
¼ teaspoon salt
¾–1 packet chickpea flour
Spray oil
60g fresh mozzarella cheese
1 tomato
1 tablespoon tomato paste
Picked basil leaves

Method

Preheat oven to 220°C. Line an oven tray with baking paper.

1. In a large bowl, mix cauliflower, egg and salt together until well combined. Season with pepper and mix in chickpea flour until a sticky batter forms.

2. Spray baking paper with oil and transfer mixture to tray. Mould mixture into a circular base, pressing down to ensure base is as thin as possible. Bake (on uppermiddle oven rack) for 14–16 minutes, until base is golden and almost cooked.

3. While base is setting, thinly slice mozzarella and tomato. Prepare any other healthy toppings you might like, such as courgette ribbons, capsicum, capers or olives.

4. Once base has set, remove from oven and spread over tomato paste. Top with mozzarella and tomato slices (and any other toppings). Return to oven for 5–6 minutes, until cheese is melted and toppings are cooked. Top with basil and slice cut into 4–6 pieces.

Alternatively, top base with tomato paste after the first 10 minutes of cook time. Return to oven for a further 5–6 minutes, until base is set. Top with fresh tomato, mozzarella and basil and enjoy!
