#loveyourleftovers with this smashing recipe! All we are saying is.. give peas a chance!
½ cup frozen peas
1 tablespoon very finely diced red onion
Zest and juice ¼ lemon
1 tablespoon crumbled feta cheese
1 slice grainy toast bread
A few mint, coriander or parsley leaves
Bring a small pot of salted water to the boil.
1. Cook peas in pot of boiling water for 1–2 minutes, until bright green and tender. Drain well then add to a small bowl and use a fork or potato masher to roughly smash.
2. While peas are cooking, cook toast in toaster until golden brown.
3. Add all remaining pea smash ingredients to bowl with peas, mix to combine and season well with salt and freshly ground black pepper.
To serve, place toast on a plate and top with pea smash. Garnish with a sprinkle of fresh herbs from the garden, if desired.
