Salmon & Horseradish Open Face Sandwich

Horseradish is great in any healthy meal — it packs a flavour punch with very minimal calories!

Serves 1


2 slices thin wholegrain toast
2 teaspoons horseradish
95g can of salmon in water, drained
1/2 tbsp lemon juice
Handful baby spinach or rocket leaves, roughly chopped
A few slices of red onion
1–2 tbsp parsley or coriander, roughly chopped

To serve — 1 lemon wedge


  1. Cook toast in toaster until golden. Spread horseradish evenly over toast.
  2. While toasting, toss leafy greens, drained salmon, herbs, red onion (if using) and lemon juice in a small bowl. Season to taste with salt and pepper and toss to combine.

To serve, pile salmon mixture on top of toast. Season with black pepper, squeeze over extra lemon juice (if using) and enjoy!
