Poached Chicken

Poaching chicken is a great method of cooking, it’s easy, speedy and doesn’t use any oil. Poach chicken in advance and store in an airtight container in the fridge for up to 3 days. Use in salads or soups as a protein addition!


Makes 3 portions

Ingredients

400g lean chicken breast

4 cups cold water (enough to cover chicken)

3 Tbsp soy sauce

Method

1. Place chicken in a pot with water and soy sauce, cover with a lid and bring to a gentle boil on medium heat. As soon as it boils, turn off heat and leave to cook, still covered, for 15 minutes. The residual heat will cook chicken through. Use a sharp knife to test if the thickest part is cooked, juices should run clear.

2. Drain chicken, discarding liquid. Slice, dice or shred chicken for Fresh Start lunches.

3. Store in an airtight container in fridge for up to 3 days.
