Herby Cottage Cheese Open Toasties

Cottage cheese is a great, low fat protein option and super convenient to take to work.

Serves 1


2 slices thin wholegrain bread

1 handful baby spinach leaves, rocket leaves or baby kale

½ cup low fat cottage cheese

1 tablespoon finely chopped chives or parsley

Zest of ¼–½ lemon

1 teaspoon lemon juice

To serve

6 thin slices cucumber or radish


  1. Cook bread in toaster, until golden. Place on a plate.

2. While toast is cooking, roughly chop leafy greens.

3. In a small bowl, combine leafy greens, cottage cheese, chives/parsley, lemon zest and juice and season to taste with salt and pepper.

To serve, top toast with herby cottage cheese mixture, slices of cucumber/radish and enjoy!
