Green Smoothie with Kale, Celery, Apple & Mint

Get your day off to a great start with this green smoothie. It's an easy way to get your veggie intake up and will have you woken up and feeling refreshed in no time! Freezing your smoothie ingredients is a fantastic way to make smoothies more flavourful and smooth, as using ice cubes can often dilute the flavour.

Serves 2

 

100g kale 

2 sticks celery 

1 green apple 

3 Tbsp mint leaves 

2 cups apple juice or coconut water  

Mint leaves (optional)

 

  1. Remove thick stem from kale and roughly chop leaves. Dice celery and apple 1cm and roughly chop mint. 

  1. Place all in an air-tight container or resealable bag and freeze for at least 2 hours, or overnight.  

  1. Place frozen ingredients in a blender along with apple juice/coconut water and blend until smooth.  

  1. To serve, divide smoothie between glasses and garnish with mint leaves, if desired.
