2 sticks celery
1 green apple
3 Tbsp mint leaves
2 cups apple juice or coconut water
Mint leaves (optional)
Remove thick stem from kale and roughly chop leaves. Dice celery and apple 1cm and roughly chop mint.
Place all in an air-tight container or resealable bag and freeze for at least 2 hours, or overnight.
Place frozen ingredients in a blender along with apple juice/coconut water and blend until smooth.
To serve, divide smoothie between glasses and garnish with mint leaves, if desired.
