Spicy Carrot Burgers with Tahini Slaw

These veggie burgers are light and moreish, with a spicy carrot patty. Paired with a refreshing tahini slaw for extra goodness!

Spicy Carrot Burger with Tahini Slaw

Serves: 2-3 

 

Spicy Carrot Burgers 

4 large carrots 

1 can cannellini beans 

1¼ cup rolled oats 

2 cloves minced garlic 

½ lemon zest and juice 

1 tsp paprika 

1 tsp cumin 

1 tsp salt 

½ tsp ground black pepper 

½ cup pumpkin seeds 

¼ cup coriander leaves and stalks 

¼ red chilli, finely chopped 

½ cup breadcrumbs 

 

Tahini Slaw 

½ savoy cabbage 

1 carrot 

2 spring onions 

2-3 Tbsp chopped coriander leaves and stalks 

Zest and juice of ½ lemon 

1 clove minced garlic 

Tbsp mayonnaise  

Tbsp tahini 

¼ tsp salt 

 

To Serve 

6 burger buns (optional) 

Tbsp mayonnaise (optional) 

 

  1. Preheat oven to 200oC. Line two oven trays with baking paper. Bring a medium pot of salted water to the boil. 

  1. Cook carrots in pot of water for about 15 minutes, until tender. Drain well and set aside to cool for about 5 minutes. Drain and rinse cannellini beans.  

  1. While carrots cook, finely shred cabbage until you have 3 cups worth; peel and grate carrot; thinly slice spring onion. In a large bowl, mix all tahini slaw ingredients and set aside.  

  1. When carrots are cooled, add all spicy carrot burger ingredients to a food processor, pulse for about 1 minute, until combined. Alternatively, in a large bowl, mash carrots and cannellini beans, roughly chop pumpkin seeds and mix all spicy carrot burger ingredients together. The mixture will be slightly chunky. 

  1. Using clean, damp hands and a ½ cup measure, shape mixture into balls, then fatten to 1cm-thick patties. Heat a drizzle of oil in a large-fry pan on medium heat. Cook burgers for about 3 minutes each side, until golden. Place burgers onto first prepared tray and bake for 10-12 minutes, until cooked through. 

  1. Slice burger buns (if using) in half and place, opened, on second prepared tray. Warm in oven for 3-4 minutes. 

  1. To serve, spread mayonnaise onto burger bun (if using)fill with plenty of tahini slaw and top with spicy carrot burger. 

     

Tips:

- Burger buns are completely optional but sesame or wholemeal pair well.  

- To spice things up add a drizzle of your favourite hot sauce to the slaw. 

- To speed things up patties can be prepared in advance.
