Salted Caramel Blondie with Sticky Bacon

What better way to treat Dad this Father’s Day than with the ultimate blondie recipe. We sure know the way to his heart, through irresistible food! You’ll just need a few ingredients to create this recipe, most of which you might already have in your kitchen. Go on, you’ll be Dad’s favourite after making him this! Made with love... by you!

Caramel Sauce 

50g butter  

½ cup brown sugar 

¼ cup cream  

½ tsp salt 

 

Sticky Bacon 

3 rashers streaky bacon (optional) 

2-3 Tbsp caramel sauce 

 

Caramel Blondies 

120g butter, at room temperature 

1 cup brown sugar 

1 egg 

2 tsp vanilla extract 

¼ tsp salt 

1 cup flour (GF if required) 

2-3 Tbsp caramel sauce 

   

To Serve 

Remaining caramel sauce 

2 Tbsp chopped, roasted peanuts 

 

  1. Preheat oven to 180°C. Line a baking dish with baking paper (measuring about 20 x 15cm). If making bacon, line an oven tray with baking paper. 

  1. Add first measures of butter and sugar to a small pot on medium heat. Whisk continuously for about 2 minutes, until butter and sugar are combined. Remove from heat, whisk in cream and salt until mixture is smooth and combined. 

  1. Place bacon (if using) onto oven tray and use a pastry brush to baste with caramel sauce. Bake (on top oven rack) for 10 minutes then flip, baste again with caramel sauce and return to oven for a further 10 minutes, until goldenOnce cool enough to handle, very finely chop. 

  1. In a large bowl, use electric beaters to cream together second measure of butter and brown sugar for about 3 minutes, until fluffy. Beat in egg, vanilla and salt. Use a spatula to fold in flour, until combined.  

  1. Transfer mixture to prepared dish then drizzle second measure of salted caramel over the dough (reserve some for serving). Use a knife to drag through the salted caramel and swirl throughout the mixture. 

  1. Bake for 30-35 minutes until set and golden. Allow to cool, top with peanuts, chopped bacon and drizzle with any remaining caramel sauce.
