Apple Walnut Teacake

2 apples
1 cup sugar
1 teaspoon ground cinnamon
1 ½ cups of self-raising flour (or 1 ½ cups flour and 1 ½ teaspoons baking powder)
125g butter, melted
1/3 cup milk 
2 eggs
½ cup walnuts, roughly chopped

Natural yoghurt or thickened cream


PREHEAT oven to 180°C. Grease and line a 20cm round cake tin with baking paper.

1. Peel apples, cut into quarters, remove core and thinly slice. Toss with 1 teaspoon of the sugar and a pinch of the cinnamon and set aside.

2. In a large bowl, combine remaining sugar, cinnamon and all other ingredients and use a wooden spoon to mix together into a batter (it will be slightly lumpy).

3. Pour batter into prepared tin and arrange apple slices on top. Bake in middle of oven for 50–60 minutes or until a skewer inserted into centre comes out clean. Leave to cool completely in tin before turning out

TO SERVE, cut into slices and serve with yoghurt or thickened cream.
