10 Healtheries Apple & Blueberry Iced Tea bags
3 tablespoons mint leaves
1x 190g can crushed pineapple in juice
1 cup frozen blueberries
1 litre cloudy apple juice
2 litres soda water
1. Place tea bags in a large punch bowl. Add 1 litre of cold water, stir and allow to steep for about 15 minutes. Remove tea bags and press lightly to strain out any excess liquid.
2. Peel apple, remove core and finely dice about 0.5cm. Finely chop mint leaves. Add both to bowl with tea, along with crushed pineapple (including juice), blueberries, apple juice and soda water and mix gently to combine.
To serve, ladle into a glass over a few ice cubes (if desired) and garnish with mint leaves.
