1 cup brown sugar
2 ripe bananas, mashed
1 ½ cups plain flour, sifted
1 teaspoon baking powder
1 teaspoon bicarbonate soda
¼ cup natural yoghurt
¼ cup milk
PREHEAT oven to 180oC. Grease and line a loaf tin with baking paper.
- In a large bowl, use an electric mixer to beat butter and sugar until pale and creamy. Add the eggs, beating well to combine.
- Add the plain flour, baking powder and bicarbonate soda to the butter mixture. Stir until well combined.
- In a small bowl, whisk yoghurt and milk together. Add the yoghurt, milk mixture and the bananas to the flour mixture, beating well after each addition.
- Spoon the mixture into the prepared loaf tin. Bake for 45-50 minutes or until a skewer inserted into the centre comes out clean. Allow to cook for 5-10 minutes before turning out onto a wire rack to cool completely.
TO SERVE, cut into slices and divide between plates.
TIP, you could also toss in a cup of chopped nuts, raisins, or chocolate chips!
