Our delicious Gameford Lodge duck

This week we're excited to provide Gourmet Bag foodies with delicious, succulent confit duck from “Gameford Lodge” to create Glazed Duck with Chervil Mash, Spring Veg and Fig Jus. Duck is such a treat and I’m a real fan of Gameford Lodge’s beautiful products. I love how providing you with confit duck takes some of the hard work out of a meal.

Gameford Lodge was established in January 2004. Prior to 2004, duck meat was relatively hard to find, mainly available in Chinese restaurants and Asian BBQ shops. Even then, you had to order Peking Duck 2 days in advance! So it was Gameford Lodge to the rescue who set up to supply restaurants, hotels and airline caterers. They are involved with every step of the production so know what is required to produce a high quality bird. As things got more established, fresh duck, under the Saveur brand, was introduced to supermarkets for everyone to enjoy at home.

There is only one type of duck commercially grown in New Zealand. It is a white, walking duck (it does not fly), known as the Pekin breed. Surprisingly, the name of the breed is unrelated to the famous dish “Peking Duck”.

Saveur and Gameford Lodge ducks are raised in the beautiful Waikato on deep litter in open sided barns allowing for natural light and fresh air, with 24 hour access to food and water.
