Philippe Arregui is L’Authentique’s resident charcutier. He and his team produce incredible sausages, parfaits and terrines as well as a few speciality, non-meat, products. All products are handmade and contain no gluten, flour or starch. With all fresh ingredients sourced locally from premium food producers, attention is paid to every detail throughout the production process, ensuring the highest standards deliver a refined and flavourful taste.
The full team at L’Authentique are foodies, creating a taste of Paris right here in NZ. We were lucky enough to be invited to L’Authentique for a sneaky tasting! Here, we got to sample a little of every product they produce, along with a taste of the matching wines!
One of the evening highlights was a delicious traditional French terrine. Terrine is essentially a gourmet meat loaf that is cooked to old fashioned preserving methods then sliced and packed. Spread on a slither of French bread, top with a drizzle of onion marmalade and you’ll swear you’re in Provence!
To round off our tasting came a selection of sausages; slowly and lovingly cooked in front of our eyes. These sausages are not to be poked or smothered with tomato sauce! The flavours are simple and gorgeous. We tried pork, pork and fennel, chicken and bacon, beef, and chorizo. Wow. You simply must try these to understand that French sausages are special.
